Mexican Wedding Cakes
1 c. butter, softened Procedure: Beat butter until creamy. Add vanilla and 1/2 cup powdered sugar and beat until creamy. Combine flour, pecans and salt. Stir into butter mixture. Shape into 1-inch balls. Place on ungreased baking sheet. Bake at 325 degrees for 20-25 minutes. Cool; roll in powdered sugar 3 times.
